BITE SIZE - Mini Chocolate Dipped Oreos ((Valentine's Day gifts)) IDEAS - chocolate transfer sheets - DIY

Happy Valentine's Day!!!

I made these for the teachers last year. BITE SIZE chocolate dipped oreos. YUMMMM!!! I love dipped oreos and make these quite often but the minis are so cute.

size difference :) Not sure the mini's are the best idea. I end up eating way more. Cute but naughty.

If you don't have or want to purchase transfers you can just use sprinkles or drizzle chocolate over them. 


This idea originally came when I ordered pre-printed chocolate transfer sheets. They were way too small to fix a regular sized Oreo or even cut to cover it. At first I was bummed but then there was a huge sale on mini cookies for $1 a bag and I of course stocked up thinking I won't eat these....just for gift ideas. Yeah right. So, I'm eating half the bag and realize they might be the right size.

Valentine's Day GLITTER Meringue Cookies - BITE SIZE! Recipe and DIY tutorial

OH WOW!!!! These cookies are gooooood! My Grandmother use to make these every Christmas but I've never tried to make them myself. I always thought they were probably way to complicated and tons of work. BUT they're not! YAY!! Plus they make a ton for easy gift giving. Double YAY!


I found THIS recipe last Thursday and thought I would make them Valentine's Day-ish.  I'm addicted to EDIBLE HOLOGRAPHIC GLITTER I used on our NYE cookies so these HAD to be glittered too. It's hard to capture how glittery and AWESOME they look. Just imagine super sparkles!!!

They are bite size (a little bigger than a quarter) so I didn't feel so guilty eating 10 of them. I felt guilty after about 30. They melt in your mouth....literally! 

Mini chocolate chips are pictured but I decided to leave them out this time.  

 1 c - sugar
1 tsp - vanilla extract
4 - egg whites (room temperature)
1/2 tsp - cream of tartar
1/2 c -chocolate chips (optional) 
edible glitter (optional)


Use the whisk attachment for free standing mixers
Medium speed beat eggs until frothy


Add cream of tartar and beat until peaks form


Increase speed to medium high and add sugar slowly. This part required some patience so I opted for a helper to add the sugar one tbsp at a time. Highly recommended :)


Sugar should be dissolved and forming stiff peaks. Added food color to make them pink. Ooooh pretty!

I used a big cupcake decorating tip and ziplock bag. Cookie sheets are lined with foil and meringues are maybe the size of a quarter or a little bigger.


They don't get any larger when baking (or much larger) so they are pretty close together. Two large baking sheets and they fit 66 per sheet. 


Bake 225 degrees for 50 mins and then turn the oven off and let them sit for an additional hour in the oven. They were still a little warm after an hour but okay to take out. 


I used all the meringue and baked both sheets at the same time. 


Ooooh Ahhhhh! So sparkly!



They don't bag really well so I put them in little plastic cups, cello gift bag, and ribbon. PERFECT!

Easy to make and they were a success (which doesn't happen with every recipe) I'm now thinking Easter pastels, St. Patricks day, etc. They would be awesome for anything!

NO bake - MINI SLIME Halloween theme desserts! Fluffy Cheesecake! Party idea

I make this cheesecake all the time into a pie ....parties, GNO, and now for a TEACHER LUNCHEON! It was Halloween theme so I thought this would be perfect! Mini desserts to pick up and go! 

Last year our grade hosted the Thanksgiving luncheon and we brought THESE


I also made these for our Halloween party HERE


1 1/4 cups of milk (we drink Almond milk and it works the same)
1 block of cream cheese (softened)
1 pkg of french vanilla pudding mix
2 tubs of whip cream 
1 pkg graham crackers
2oz plastic shot glasses

Optional
Eyeball candy

Supplies

2 large zip lock bags to make filling the cups easier
2 icing tips
1 medium size zip lock for crushing the graham crackers
tenderizing mallet or anything to use for smashing 


For Thanksgiving theme luncheon last year I used 1oz plastic shot glasses (found at HEB grocery store)
But this year I wanted them to be a little bigger. I measure they would fit in my boxes they were being delivered in and they did!

I used one package within the box of graham crackers (come with three) and crushed them. This was the boys favorite part! "HULK SMASH"

Added lime green food coloring drops...maybe 8-10
MAKE SURE THE CREAM CHEESE IS SOFT
If it is still firm it will be lumpy and the lumps combine with the pudding and they don't go away. 

Mix 1/4 cup of milk and cream cheese. Blend until super smooth

Then blend 1 cup of milk and 1 pudding mix

Blend until smooth

Fold in 1/2 whip topping just until mixed. Mix by hand with a spatula or lightly.


Bagged the rest of the 1/2 of whip cream and additional tub and bagged the cheesecake mix

Started filling with graham crackers

Then the "slime" cheesecake

REPEAT

The mixture fills about 40 2oz shot glasses

Chocolate eyeball candy. Found these at HEB or party city


LOVE THEM!!!


I made tags that said the teachers were spooktacular and Happy Halloween

Since I had my hubby deliver these I made a note on the box 

Now refrigerate! Best served 4-8 hours after making them so the cheesecake has time to set. 






I happen to be at the school and took a picture. I brought mini plastic spoons to sever with them.
